x64 memory query

our environment esx 3.5, windows 2003 sp2 enterprise servers guests.
have application running on vm guest. 32bit app, have assigned 4gb ram in case. figure if ram not used, not losing anything, since not directly paying exclusive use physical box.
we're in midst of refresh, , we're upgrading windows 2008 r2 servers 64bit os.
i'm trying work out amount of ram assign guests host application.
- should continue assign 4gb
- there benefit of assigning more 4gb 32bit app (i read on ee 32bit apps see 4gb virtual address space per process, guess there multiple processes)
- third option i'm thinking using perfmon baseline our existing servers , find average of memory use over, say, 48 hours. know best counter use , case of running perfmon 48 hours , using average value whatever counter? question is, 2008 handle memory in differernt way 2003 server?
